Quiche Lorraine

I love going out to brunch. It is one of the best things NYC has to offer. All of the eggs and bacon and bottomless bloody marys make me swoon. However, sometimes it’s just too much to deal with the crowds, or the $12 price tag for just some eggs and bacon you can easily make at home. The goal is to spend quality girl time, not all of your dollars.

Hence why I love having girlfriends over for brunch. Pop a bottle of prosecco, throw a quiche in the oven and some greens in a bowl and you have a no-fuss, low cost intimate meal that waiters won’t be shooing you away from after 30 minutes.

  • 1 store bought deep dish pie crust (or, make your own!)

  • 4 eggs

  • ½ c creme fraiche

  • ½ c whole milk

  • 6 pieces of bacon

  • 2 oz gruyere cheese, grated

  • Salt and pepper

  • Pinch of nutmeg

Preheat oven to 350*

Chop the bacon into small pieces and fry in a pan until almost crispy.

In a bowl, whisk together eggs, creme fraiche, milk, salt, pepper and nutmeg.

Scatter the bacon and ⅔ of the cheese onto the bottom of your pie crust. Pour over the egg mixture. Top with the rest of the cheese.

Bake for 40 minutes.

Serve at room temperature (perfect to make in the AM before your guests arrive, so no more cooking to be done!) with a side salad of greens with balsamic vinaigrette and plenty of bubbly.
