Steak with Zucchini and Bacon

Sometimes you just need steak. And bacon. I’m of the philosophy that neither need to be saved for special occasions, nor do they need to cost an arm and a leg. This super quick fry up is super satisfying, and impressive to throw together on a Tuesday night.

Recipe inspired by Italian Food Forever

  • 2 steaks
  • Salt and pepper
  • 1 T butter
  • 1 T olive oil
  • 2-3 zucchinis, sliced in half lengthways and chopped into 1.5 inch pieces
  • 4 slices of bacon, chopped

ook chopped bacon in a non-stick pan until it begins to get crispy. Add the zucchini and sauce until the vegetables are cooked but still firm (this is a great way to cook zucchini without them getting terribly soggy as they tend to do). Season with salt and pepper.

When the zucchini are almost cooked, heat a cast iron skillet with the butter and olive oil. Salt and pepper both sides of the steak. When sizzling, add the steak and cook until medium rare, about 2-3 minutes each side.

Divide the steak and zucchini between 2 plates. Enjoy!
