Salmon Almondine

I've been trying to incorporate more fish into my diet, as I always forget it's such a quick, easy and healthful weeknight go-to. This week I fancied it up with some brown butter and toasted almonds, which truly make anything taste better (even green beans!)

Inspired by Real Simple

  • 2 salmon filets
  • Salt and pepper
  • 1/2 pound green beans
  • 1/4 c sliced almonds
  • 3 T butter
  • 2 T capers

Put green beans in a pan and fill with water, season with salt. Bring to a boil and cook until beans are bright green and tender, about 5 minutes. Drain and set aside. 

Heat 1 T of the butter in a skillet over medium heat. Season the salmon with salt and pepper. Add salmon to the hot pan and cook until cooked through, about 3 minutes per side.

In a small pan heat remaining 2 T of butter over medium heat. Add the almonds and cook, stirring frequently, until almond and butter are golden (be very careful as they will burn quickly). Remove from heat and add capers.

 

Split salmon and green beans between 2 plates. Pour over almonds and butter. Serve with a side of potatoes.
