Cauliflower Cheese

Growing up my mom always made cauliflower with cheese sauce. It was a way to get my brother and I to eat our vegetables, but covered in rich, creamy béchamel the sauce likely counteracted any nutritional value we were getting. Today I (obviously) love cauliflower, and sometimes I still crave that cheese.

This is my healthy version, high in protein and vegetables with just a hint of cheesy goodness.

  • 1 head of cauliflower, chopped into small florets
  • 1.5 c fat free Greek yogurt
  • 1/4 c grated parmesan cheese
  • 1 t garlic powder
  • Salt and pepper
  • 2 oz grated cheese (cheddar, gruyere, or other good melting cheese)

Place florets in a saucepan with about 2 inches of water. Place on high heat and steam until cooked through, about 3-5 minutes. Strain.

In a bowl, mix together the yogurt, parmesan, garlic powder salt and pepper.

Add the cauliflower to the yogurt mixture and toss to cover all of the cauliflower with yogurt.

Place in an oven-proof dish. Sprinkle with cheese. Bake at 400* for 20 minutes, or until heated through and the cheese is melted and bubbling.
