Peruvian Green Sauce
This sauce comes together in 20 seconds and is so delicious you can eat it on anything. Chicken, fish, burgers, fries...it's both spicy and creamy, fresh with the taste of cilantro. While yes, you have to order one ingredient off of Amazon (aji amarillo paste), it makes at least 10 batches of what will become your go-to sauce obsession.
Adapted from Serious Eats
1 jalapeno, de-seeded (unless you like it really hot)
1 T aji amarillo paste
1 c cilantro leaves + small stems
2 T grated parmesan cheese
1 garlic clove
1 T vegetable oil
1 T white vinegar
Juice from 1/2 of a lime
1/2 c mayonnaise
Put all ingredients into a blender or food processor and blend until smooth. Eat immediately or refrigerate until use.
