Cauliflower "Tater Tots"

I'm always the person plugging away on Pinterest looking for ways to make something I'm craving healthier. Pizza crusts, breading, even dessert - I love a good healthy hack.

Today I was looking for a health-ed up version of something dippable - entirely due to the fact I was craving ranch dressing. I settled on chicken nuggets (breaded with almond flour) and then stumbled upon these bad boys: healthy tater tots.

While definitely not that much like a tater tot - not as crispy or soaked in grease - they definitely hit the spot as the perfect bite sized dinner item to dip.

From Little Things

Cauliflower "Tater Tots"

  • 2 c cauliflower, finely chopped, steamed and drained
  • 1 egg
  • 1/4 c cheddar cheese, shredded
  • 1/4 c mozzarella cheese, shredded
  • 1 t garlic powder
  • Salt and pepper

Preheat oven to 450*.

You want to make sure you get as much moisture out of the cauliflower as possible. To do so, take the cooked vegetable and place onto a clean dishtowel. Gather the ends, hold over the sink, and squeeze- the water will flow out. Put dried cauliflower into a medium bowl.

Add the other ingredients and mix thoroughly. Take a tablespoon at a time of the mixture and form into a ball. Place on a greased baking sheet. This should make about 16 in total.

Bake for 20 minutes and enjoy with your favorite dipping sauce!
