Pastrami "Reuben" in a Bowl

I'm anything but a purist, especially when it comes to sandwiches. Sure I like the traditional combos, but I'm also open to change to enhance deliciousness in whatever way my mood takes me. And today, it took me to a bowl.

A salad topped with or just plain bowl of sandwich fillings is such a great quick and easy meal. Tonight I was feeling the tangy-crunchy-creaminess of a Reuben. While I only has pastrami on hand, this bowl made me feel like I was eating the most giant sandwich ever (and honestly I could keep going back for more). This was made even better with a jar of Sir Kensington's Special Sauce replacing the thousand island dressing. Let me tell you - if you want something tangy and creamy and completely moorish, pick up a jar of this stuff. Yum!

Melt the butter in a pan over medium high heat. Add the cabbage, salt and pepper and cook until soft. Remove from heat.

In a bowl, add the cabbage, sauerkraut, pastrami and sauce. If you're like me, mix them all together into the best mixed-up-sandwich-filling bowl ever.
