Sausage, White Bean and Broccoli Rabe Soup

I'm admittedly not a soup person. Unless combined with a hearty sandwich or filled with a pound of pasta I find it honestly unsatisfying. But, it's also been freezing in NYC so I'm about willing to consume anything that has bone defrosting abilities.

There are so many great recipes out there for sausage, white bean and kale soup, which sounded to me to have much more rib-sticking goodness than your typical broth, so I wanted to try it for myself. I switched out the kale for broccoli rabe because I saw it frozen on Amazon Fresh and thought "well that's about the best idea ever." And it was.

This soup is SO easy and perfect for when you're freezing and need to get warmed up quick.

Sausage, White Bean and Broccoli Rabe Soup

Serves 4

  • 4 chicken sausage links, casing removed
  • 1 onion, diced
  • 2 cloves garlic, sliced
  • 1 T olive oil
  • 1 medium carrot, chopped into 1/2 inch pieces
  • 1 medium potato, peeled and chopped into 1/2 inch pieces
  • 1 can (1.5 c) cannellini beans
  • 5 c chopped broccoli rabe
  • 4 c chicken stock
  • 1 oz Parmesan cheese

Heat the olive oil in a dutch oven until hot. Add the onion and cook until it begins to soften.

Add the chicken sausage, breaking it up with your spoon while it cooks so it makes lots of little pieces. Heat until cooked through.

Add the carrot and potato, cook for 5 minutes, stirring occasionally.

Add the beans, broccoli rabe and chicken stock. Bring to a boil then turn down to a simmer and let cook until all of the vegetables are soft, about 15-20 minutes.

Serve in a bowl and top with grated Parmesan.
