Cauliflower Fried Rice

Ok ok, everyone has a cauliflower fried rice recipe these days. And I’m no different! I pretty much always have the ingredients on hand (frozen cauli-rice, frozen mixed veggies, an egg, an onion…) and it’s so super quick to make it’s great for those “there’s train traffic ahead of us” evening commutes. I usually pair with some leftover protein or do a quick pan fry of some salmon or a chicken breast. It may not be the fanciest thing in the world, but I’m tellin’ ya, it tastes great and leaves you full. Which is pretty much all I need on a Tuesday.

Cauliflower Fried Rice (makes 2 servings)

  • 1/2 T toasted sesame oil

  • 1/2 large onion, diced

  • 1 package of frozen cauliflower rice

  • 2/3 c frozen mixed vegetables (peas and carrots)

  • 1 egg

  • 3 T soy sauce

  • 1 T rice vinegar

  • Salt and pepper, to taste

Heat the sesame oil in a large non-stick skillet. Add the onion and sautee until soft and translucent.

Add the cauliflower rice and mixed veggies and cook until warmed through.

Push the vegetables to the side of the pan. Crack the egg into the cleared area and quickly scramble until fully cooked. Then, mix with the vegetables to fully incorporate.

Add the soy sauce and rice vinegar, stir to combine. Take a taste and adjust salt and pepper as needed.

Serve with your favorite quick protein.
