Parmesan Crusted Chicken

Love crunchy fried chicken? Love the part of grilled cheese sandwiches where the cheese has overflowed and melted onto the pan? Then this is the recipe for you!

Coated in seasoned parmesan cheese (vs. the typical breadcrumbs), this chicken is fried to crispy cheesy perfection. I love how this crust ads salty, savory flavor typically lacking in boring chicken breast and makes it something you really won't want to stop eating.

  • 2 chicken breasts
  • 1/2 c parmesan cheese, finely grated
  • 1/2 T dried parsley
  • 1/2 T dried oregano
  • 1 t garlic powder
  • 1 t paprika
  • 1 t salt
  • Non-stick spray
  • 2 T olive oil

On a plate or shallow dish, mix together parmesan, parsley, oregano, garlic powder, paprika, and salt until well combined.

Spray both sides of each chicken breast with non-stick spray. Dip each size into the parmesan cheese until both sides are well coated.

Heat the olive oil in a large non-stick pan on medium. When hot, add the chicken breasts and cook until the chicken is 165* F, about 20 minutes, turning every 5 minutes to make sure the coating doesn't burn.

Serve with mashed potatoes or mashed cauliflower.
