Creamy Leek Soup
If you love leeks as much as I do then you'll love leek soup. Just a few simple ingredients, a quick blitz in the blender, and a warm creamy dinner is on the table in no time.
- 1 T olive oil
- 1 lb leeks, sliced and rinsed clean
- 1 onion, thinly sliced
- 4 c chicken stock or vegetable stock, preferably homemade
- Salt and pepper
Heat the olive oil in a large pot over medium high heat. Add the onion and leeks. Cook until the vegetables are soft and beginning to caramelize.
Add the stock and bring to a boil. Simmer for 15 minutes to let the flavors come together.
Blend the stock and leek mixture until smooth (you can put it into a blender or use an immersion blender to do this). Season to taste with salt and pepper.
