Low Carb Alfredo Sauce

If you haven't noticed on my Instagram, I'm on a low carb kick lately.

Call it a "New Year's Resolution," but overall I'm looking to improve my overall health this year. Which included actually scheduling a dentist appointment, meditating (almost) every weekday morning, and taking on a mostly low-carb diet.

The thing about "diets" is I hate feeling deprived. I love to eat, I love to drink, and saying "no" will last about a week until I'm wearing my hoodie and sunglasses in an attempt to be covert at my local bagel shop. So, this has been a fun challenge! And what I've discovered is eating low carb doesn't have to include deprivation - but can be tasty and SUPER filling (especially important for Ms. Hollow Legs over here). 

This sauce is low carb and delicious - incredibly satisfying and creamy and while not provide the belt-bursting fullness of a real Alfredo, it's a nice compromise :)

Low Carb Alfredo Sauce

  • 2 T cream cheese, room temperature
  • 3 T water
  • 1 t garlic powder
  • Couple grinds black pepper
  • 1.5 T unsalted butter, room temperature
  • 3 T Parmesan cheese, grated
  • 1 pinch nutmeg

In a bowl, combine the cream cheese, water, garlic powder and pepper and microwave for 12 seconds. Add the butter and stir until the butter is melted and fully combined. Add the cheese and nutmeg and stir until smooth. Toss with your favorite pasta or zoodles.
