Peanut Sesame Noodles
Cold sesame noodles is one of my favorite dishes to order when I get takeout. Mostly because it's a giant bowl of carbs covered in creamy, nutty sauce that has no redeeming quality except for the fact that it's delicious.
Back when I first moved to NYC, my roommate made her own peanut version of the glorious takeout dish, which I had forgotten about until stumbling onto this healthed-up version from Healthy Recipes Blog. How could I forget this amazing oh-so-easy recipe?!
Go and make this. Tonight. It takes less than 10 minutes. But make sure to double it. Trust me.
Peanut Sesame Noodles
- 8 oz cooked spaghetti, rice noodles or Miracle Noodles
- 1 t sesame seeds
- 1 scallion, chopped
- For the sauce:
- 1 t sesame oil
- 1 T soy sauce
- 1/2 T rice vinegar
- 1 T creamy peanut butter
In a small bowl, mix together to sauce ingredients.
Heat a nonstick frying pan over medium high heat. Add the noodles and dry fry until they are heated through, 1-2 minutes. Add the sauce and toss until all noodles are covered, 1-2 additional minutes. Sprinkles over the sesame seeds and toss to combine.
Serve topped with chopped scallions. A side of chicken would also pair nicely.
