Three Cheese Stuffed Chicken

Today I hit 1,000 followers on Instagram! And to celebrate, we popped a bottle of Moet and ate cheesy, gooey chicken that was so easy to make we could focus all of our attention on some A+ champagne and celebration.

Three Cheese Stuffed Chicken (serves 2)

  • 2 chicken breasts
  • Salt and pepper
  • 1/2 c shredded cheddar
  • 1/2 c shredded mozzarella, + extra to top
  • 2 T grated parmesan
  • 1 spring onion, thinly sliced

Preheat oven to 375* and cover a baking sheet in tin foil.

Butterfly each chicken breast (slicing in half horizontally so it opens like a book, making sure you don't cut all the way through so both sides are still attached). Pound with a meat tenderizer until 1/4 inch thick.

In a bowl, mix together the cheeses and spring onion.

Sprinkle half of the cheese on top of each chicken breast. Roll the breasts up and place seam side down onto the baking sheet. Bake for 30 minutes, or until the chicken is cooked through and the cheese on top is golden.

Slice and serve with your favorite side dish.
