Spaghetti Squash Lasagne
Yes, I am one of those people.
- Thursday: I'm going to make a list of everything I want to do this weekend! Productivity!
- Friday: Wow, I'm so exhausted from this week. Night to relax!
- Saturday: OMG it's so nice out, better take advantage of it and spend the whole day outside.
- Sunday: Another nice day! I'm outside! And...now I have to get ready for the week.
Sunshine is my #1 distractor from all things productive. I cannot bare to sit inside when Vitamin D is calling to me. A blessing and a curse, I say.
So tonight, I came home and realized that yup, I didn't do anything I was "supposed" to do and yup, I 100% do not regret it but yup, I've now got to clean the bathroom. Immediately.
Cleaning the bathroom on a Monday night definitely deserves a reward, and with all of the leftover ingredients from Saturday's pizza I decided to make...lasagne! Inspired by Delish's Spaghetti Lasagne (because doesn't that look like the best thing ever) I replaced the pasta with spaghetti squash and made my own lightened up version. Best part - I put it in the oven, cleaned for 20 minutes, and by the time I was done dinner was SERVED.
Pro-tip: Save the bites of cheesy, crispy topping until the end. H-E-A-V-E-N.

Spaghetti Squash Lasagne
- 2 c cooked spaghetti squash
- 1 c marinara sauce (I like Rao's because it's low sugar)
- 8 oz ground beef (you can leave out to make this vegetarian)
- 1/2 c ricotta
- 1/2 c shredded mozzarella
- Salt and pepper
- 2 T grated parmesan
Preheat the oven to 400*
In a small saucepan, cook the ground beef over medium high heat. Stir and chop with a wooden spoon until all the meat is browned and crumbly. Add the marinara sauce, stir to combine, and turn off the heat.
In an oven proof bowl (about 9" wide) add a couple spoonfuls of the marinara sauce. Layer 1 c spaghetti squash, followed by half the meat sauce, 1/4 c ricotta and 1/4 c mozzarella. Repeat. Top the final layer of mozzarella with the parmesan.
Bake for 15 minutes, then set the oven to broil and cook for 5 additional minutes, or until the top is golden. Enjoy!
