"Oopsie Bread"

Let's be real. I'm trying to eat healthy.

I hate the word "diet," or trying to force myself to "be on a diet," but after 3 years of little exercise and eating whatever I want I am now facing a beach vacation that's making me question my bikini collection. But instead of going the boiledchickensteamedbroccoliforthreemonths route, I'm opting to test a new low carb lifestyle. Which also means there's done of weird fun recipes to try. And that get's me excited.

Like this one. Avoiding bread isn't too difficult for me, but when I crave a juicy burger a lettuce wrap just won't do. Who knew that you can make "bread" from eggs and cream cheese?! Not me, but I'm always up for a challenge, and I have to say that these didn't disappoint. Instead they rather satisfied my craving, held up perfectly, and how I can't stop thinking about other ways to cook with this weird concoction (tacos? pizza? breakfast sandwiches?)

Oopsie Bread

  • 3 eggs, separated
  • 1/2 c cream cheese, softened
  • pinch of salt
  • 1/2 T psyllium husk
  • 1/2 t baking powder

Preheat oven to 300*

Put the egg whites in a large bowl with the pinch of salt. Whisk until they are very stiff (you can turn the bowl upside down and the whites won't fall out).

In a separate bowl, mix together the yolks and cream cheese until smooth. Add the psyllium husk and baker powder and mix to combine.

Fold the egg whites into the yolk mixture with a metal spoon, making sure to keep the air in the whites as much as possible (there will be big chunks of whites...that's fine).

Place dollops of the mixture into a baking sheet and make into a disk with the back of a spoon, making 6 large or 8 smaller discs. Bake for 25-30 minutes or until golden brown.
