Avocado Stuffed Meatballs

I've made enough meatball recipes that you should know I love them, but did you know that I've never actually stuffed a meatball? True story. And with all of the stuffed burgers I've been seeing on Instagram as summer quickly approaches, I decided it was high time I made a meatball filled with something ooey and gooey.

Of course, that would typically be cheese. Aaah, cheese <3 I am, however, trying to avoid dairy at the moment to get ready for my beach vacation so needed an alternative: cue avocado.

This meatballs are super quick to make, healthful and filling. I loved the warm, melty avocado even paired with a rich tomato sauce. Who knew?!

Avocado Stuffed Meatballs (makes 10)

  • 8 oz ground meatloaf mix
  • Pinch of salt and pepper
  • 1 T Worcestershire sauce
  • 1 T reduced sugar ketchup
  • 1 T mustard
  • 1/2 t garlic powder
  • 1 avocado, diced into 1/2 inch chunks
  • 2 T olive oil

In a bowl, combine the ground meat with the salt, pepper, Worcestershire sauce, ketchup, mustard, and garlic. Mix thoroughly til combined and divide into 10 even chunks.

Take each chunk and flatten in the palm of your hand. Place a piece of avocado in the middle and wrap the meat around it, making sure the avocado is completely covered. Repeat with all 10 pieces.

In a nonstick pan, heat the olive oil over medium heat. Add the meatballs and cook on each side until brown, turning until all sides are brown and the meat is cooked through, about 5 minutes.

Serve with your favorite pasta, or just eat them straight from the pan :)
