Cauliflower Rice Tabouli
SO excited to have another awesome "salad but not a salad" under my belt. I grew up loving tabouli and was skeptical about re-creating it with cauliflower, but let me tell you, this salad is ACE! Fresh, herby, and perfect for a hot summer day (or, a hot spring day, since its 90*+ here in NYC).
Cauliflower Rice Tabouli (serves 2)
- 1 c riced cauliflower, steamed and cooled
- 10 cherry tomatoes, sliced
- 1 c cucumber, chopped
- 1/4 c parsley, finely chopped
- 1/4 c mint, finely chopped
- 2 T olive oil
- 2 T red wine vinegar
- 1 t garlic powder
- Salt and pepper
Mix all ingredients together. Let sit for 15 minutes, then enjoy!
