Cauliflower Hummus
What...another cauliflower recipe?! I know you must be sick of it, but trust me when I say I'M NOT. I'm seriously loving finding unique ways to use one of my favorite veggies and let me tell you this hummus is unreal. Dare I say I like it better than regular hummus? It tastes like regular hummus but is so much lighter, and I left it a little chunky to add some texture. I served it with some turkey meatballs, but it would be great as a dip or alongside a mezze platter.
Cauliflower Hummus
- 1 bag frozen cauliflower or 1 head fresh cauliflower
- 3 T olive oil
- 3 T tahini
- 2 T lemon juice
- 1/2 c water
- 1 t cumin
- 2 cloves crushed garlic
- Salt and pepper
Preheat oven to 400*
Place the cauliflower on a baking sheet. Bake until cooked through and golden, about 20-30 minutes. Remove from oven and let cool.
Place cauliflower in a medium bowl with the rest of the ingredients. Using an immersion blender, pulse until blended (for smoother consistency, place all ingredients into a food processor and blend until smooth). Add extra water bit by bit until you get the consistency you desire.
