Turkey and Broccoli Reuben

It’s been hard to avoid the recent broccoli reuben trend - a few mentions from the Bon Appetit team (on both YouTube and Instagram) and I’ve seen it popping up left and right. And as a self-proclaimed sandwich lover I thought it looked…amazing. I love veggie-heavy sandwiches and ones that have layers and pops of flavor, and this has both via some quick homemade “Russian dressing” and zingy sauerkraut. Don’t be intimidated by the list of ingredients - I have tricks to make putting it together each day a cinch (and I also added some turkey to up the protein (and keep me full through afternoons of meetings - which it does!).

Turkey and Broccoli Reuben (makes 5 sandwiches)

  • For the broccoli

    • 2 crowns of broccoli, cut into florettes and the stems cut into small pieces

    • 2 T olive oil

    • Salt and pepper

  • For the sauce

    • 5 T light mayonnaise

    • 3 T ketchup

    • 1 pickle, diced small (or 1 T relish)

  • For the sandwich

    • 5 slices Swiss cheese

    • 2 slices of your favorite bread (ideally rye)

    • 1 c sauerkraut

    • 10 oz sliced deli turkey

To prepare in advance: the broccoli and the sauce:

For the broccoli, preheat your oven to 400*. Spread broccoli on 2 large baking sheets. Drizzle 1 T of olive oil across each sheet of broccoli, season with salt and pepper, toss to combine, and spread out into 1 layer. Roast for 15 minutes, remove from the oven and turn the broccoli over to expose the underside, and roast for 10-15 more minutes until crisp and slightly charred. Let cool and store in Tupperware

For the sauce, mix ingredients together and store in a jar.

To make the sandwich each day:

First, heat the broccoli and cheese

Stovetop: Take 1/5 of the broccoli (about 1/2-3/4 of a cup) and place it in a nonstick pan over medium heat. Heat the broccoli until warm, tossing occasionally. Move the broccoli into a bread-sized pile, place a slice of Swiss on top, and cover for about a minute until the cheese has melted. Remove from heat.

Microwave: Place broccoli into a bread-sized pile and top with Swiss cheese. Microwave for 45 seconds, or until broccoli is heated and cheese is melted.

Then, make the sandwich: Toast the bread. Spread each side with 1 T of the sauce. On one side, place 2 oz of sliced turkey, the broccoli and cheese, and top with 2 T sauerkraut. Place the 2nd piece of toast on top. Enjoy!
