Avocado Toast with Labneh and Za'atar
Avocado toast may be one of the hottest breakfast trends (that just keeps on going), but I actually grew up eating it before anyone thought it was cool. And I understand why the trend has yet to cease - I’m still not sick of it after eating it for probably over 30 years. It’s creamy and crunchy, healthful, fills you up, and is something you can throw together in 3 minutes as you’re running out the door. An A+ breakfast in my book.
While I typically add some sort of egg on top of mine (#protein), today I tried a new spin by topping it with some labneh. I had labneh on toast at a cafe in San Fransisco years ago and it’s always stuck with me - it was creamy and savory and topped with crunchy herbs and nuts that just made my heart swoon. So this is a nod to that delightful breakfast, along with the addition of one of my favorite spice blends to give it even more flavor and interest. You could go crazy with the toppings you love - I’m thinking some pepitas or slivered almonds, everything bagel seasoning, or even an egg if you’re feeling adventurous.
Avocado Toast with Labneh and Za’atar
1 slice toast (I think some sort of sprouted or seedy bread tastes best)
1/2 avocado
2-3 T labneh (or mix 2-3 T Greek yogurt with a pinch of salt and a squeeze of lemon juice)
1 t za’atar
Mash the avocado directly onto the toast to cover the whole of one side.
Spread the labneh on top, and sprinkle with za’atar.
